This week, I thought I would continue with another grilling recipe. I created this recipe at my parents house, by using some leftover herbs, which were going to go bad in my mother’s refrigerator. Both of my parents are not huge sauce and marinade fans. Due to this, we did a cook off. Half of the lamb chops were simply seasoned with salt and pepper. The others, however, were marinaded in a Chimichurri Sauce. Needless to say, the marinaded lamb chops won out in the end.
Here is what you need for the marinade:
(This can marinade up to 8 lamb chops)
8 lamb loin chops
1/2 bunch of parsley
1/2 bunch of cilantro
2 garlic cloves
1/2 t salt
1/2 t pepper
2 T apple cider vinegar
1/4 olive oil or avocado oil
Combine all of the ingredients except oil into a food processor or blender. Turn on, and then slowly pour oil into the mixture. Continue to until completely blended. Next place lamb chops in a zip lock bag, and pour mixture over the chops. Let them marinate for for at least an hour. Turn on grill to 400 degrees, and grill each side for 3 to 4 minutes per side.
